For a tender octopus

Fresh octopus needs to be tenderised and then to be carefully grilled or boiled. If it's a freshfrozen octopus it doesnt need to be tenderised. When slow cooking the octopus we mustn't prolong for over an hour - depending on the octopus's weight, because prolonged cooking can disolve the muscle fibers and the dissolution of its collagen, becoming like jello. The octopus then dissolves and loses its taste.
