Ingredients:

• 700 gr of lightly salted cod fillet
• 800 gr of peeled potatoes
• 8 garlic cloves
• ½ a teaspoon of pepper
• 2 teaspoons of salt
• 1 tablespoon of dried tarragon (or 1 tablespoon of lime zest)
• ½ a grated nutmeg grain
• 20 ml of lemon juice
• 100 gr of margarine
• Some white durum flour for the batter

Take the fillets out of the bag and place them in a strainer, over a deep bowl, to collect the thawing fluids.

Cover the bowl with a wet towel or a cling film and place it in the refrigerator. The fillets are thawed after regaining their elasticity.

Rinse the fillets and drain them well in a strainer.

Prepare the garlic sauce: In a pan with plenty of boiling water, add 1 tablespoon of salt and then add the potatoes. Boil them for approximately 22 minutes and then add the garlic. Continue to boil until the potatoes are soft.

Mash the potatoes and the garlic in a blender, without completely draining them, so the garlic sauce doesn’t become too solid. Add the pepper, salt, tarragon, nutmeg and lemon juice and then stir well. Finally, add the margarine and stir again until it becomes a smooth creamy mixture.

Prepare the fillets: Drain them well and pass them from the flour, making sure you cover all sides, and then fry them in hot oil. Carefully turn the fillets over until the color is golden on both sides and place them on an absorbent paper towel.

Serve the fillets and accompany them with the garlic sauce and sprinkle them with sweet paprika, if so desired.

Alternatively, you can create a beer batter for the cod fillets and then fry them. For the beer batter you will need 1 can of beer (330ml) and 100 gr of batter mix. Mix both materials until smooth, batter the fillets and then fry them in hot oil.
