Ingredients:

• 700 gr of squids whole (preferably from Patagonia)
• 250 gr of Feta cheese
• 2 eggs
• Flour
• Sesame for the cheese

Take the squid rings out of the bag and place them in a strainer, over a deep bowl, to collect the thawing fluids.

Cover the bowl with a wet towel or a cling film and place it in the refrigerator. The squid rings are thawed after regaining their elasticity.

Clean the squids and wash them under running water. Place them in a strainer and allow them to drain thoroughly.

Cut the squids in 2-3 pieces depending on the length of their flesh. Make small incisions on their tails, to remove any remaining water.

Thoroughly drain them on an absorbent paper towel, flour and fry them in hot corn oil for 3 minutes.

Cut the Feta cheese in large pieces; pass them through the egg and then the sesame.

Fry the Feta cheese in hot oil for about 3 minutes from both sides and then put it in the oven at 180°C for two and a half minutes.

Serve immediately with lemon juice and a seasonal salad.
