Ingredients:

• 500 gr of small size peeled shrimps
• 400 gr of diced canned tomato with onion
• 150 ml of water
• 2 teaspoons of chopped chili peppers
• 1 teaspoon of chopped garlic
• 100 ml of olive oil
• 1 medium size green pepper cut into rings
• 1 teaspoon of salt
• 50 gr of chopped spring onion
• 2 tablespoons of chopped parsley
• 100 gr of Feta cheese
• 100 ml of water
• 1 vegetable bouillon concentrate
• 2 tablespoons of Parmesan cheese

Take the shrimps out of the bag and place them in a strainer, over a deep bowl, to collect the thawing fluids.

Cover the bowl with a wet towel or a cling film and place it in the refrigerator. The shrimps are thawed after regaining their elasticity.

Thoroughly rinse the shrimps and let them drain in a strainer.

In a food processor, blend the diced tomato with 150 ml of water and then pour it into a deep frying pan. When it starts to boil, add the chili pepper, the garlic, the olive oil, the green peppers, the salt and the spring onion.

Keep on cooking for 5 more minutes before adding the parsley, the broth, the rest of the 100 ml of water and the shrimps.

Cut the Feta cheese into pieces with your hands, add the cheese to the pan and simmer for 2 more minutes.

Finally, sprinkle some Parmesan cheese, stir gently and remove from the heat.
